Breast fillets are very versatile and quick to cook. Ideal for simple mid week suppers but can also be made more glamorous for a sustainable dinner party dish.

Set oven at 200ºC/180ºC fan, gas mark 6. Roast the breasts for 15 minutes in oil or a sauce. Or to stir fry cut into strips, fry for 7 - 10 minutes
