Slow grown free range pork sourced just up the road from us from Blythburgh. This is an old fashioned cut of pork from the shoulder. This is a smaller cut than the bone-in shoulder and is slightly leaner. But like the shoulder joint, it is ideal for pulled pork recipes.
Stunning when slow roasted in silver foil over a bed of apple and onion with cider. Falls apart when cooked at 160 degrees for around 4 hours. Remove the foil after 4 hours, rub some salt on the skin and cook at 220 degrees for half an hour to get some good crackling.
