As they are traditionally dry plucked on site, achieving restaurant-quality crispy skin at home is easy too!

Each pack contains a pair of breast fillets. Each fillet weights approx: 220–250g  

“Place a roasting tin in your oven and preheat the oven to 200ºC (180ºC fan). Lightly score the skin and season generously then place the fillets skin-side down in a cold frying pan. Turn the heat up gradually to medium-hot until the fat has rendered then turn the fillets over to sear the other side. Transfer to the pre-heated baking tray then cook in the oven for 8–10 minutes. Rest for at least 10 minutes before serving.”
