They exhibit a unique fragrance both fresh and cooked and have traditionally been prized as the goto flatfish for the UK fish and chip sector. Summer - Autumn is the best time to eat them when they’re in prime condition.
For best results: Pan fry whole on the bone dredged in well-seasoned flour and serve with fresh lemon. The fillets also deep or shallow fry beautifully in a light batter or panko crumbs
